  Hummingbird Cake Recipe


Being a stay at home mummy to two little ones in Singapore means that we have no shortage of playdate invitations. There seems to be a lot of SAHM's around. I'm certain that if it wasn't for Ivy and Poppy, my social landscape would be quite barren! Today I hosted a playdate for my friends with babies (11 adults and 9 kids!). We had a fab day. 

I made some of the food and was asked for the recipes. So I've decided to share with you my secret Hummingbird Cake recipe. Lucky you! You can thank me later :)

It's delish, really moist and packed with tropical flavours. Just a note about the apple sauce...I use it in this recipe to replace 1/2 cup of oil, to make it a little healthier. If you don't have apple sauce you can just use 1 cup of oil.

Other things I made...a yummy quiche using this recipe. Instead of lardon I used bacon. I also added steamed fresh salmon, spring onions and coriander. On top of the quiche is rocket dressed simply with balsamic vinegar, olive oil and malden salt.

Fresh lemonade, made with lemons, sugar and mineral water! Easy.
